Lentil patties


I love lentils and thankfully so do my kids. As babies,  they lived on lentil puree (my youngest still does).  And now as toddlers they love these simple patties, served with homemade mayonnaise or tomato sauce.

These patties are also great for a dinner party or picnic!

                                                                 Lentil patties-makes about 24





200g  red lentils

150g  boiled potatoes (you could even use sweet potato if you prefer)

1 handful of Italian flat leaved parsley

30g of leek

1/2 carrot

1/2 red pepper (optional)

1 small onion

1 tbs tomato concentrate

paprika and nutmeg to taste

3 tbs bread crumbs

pinch of salt



1. Preheat oven to 180 degrees celsius.

2. Put the carrot, leek, onion, parsley, pepper, spices and tomato paste into a mixer for 30 seconds.

3. Add the cooked lentils, blending together until a smooth paste is formed.

4. Mash potato in a bowl until there are no lumps.

5. Mix the lentils in with the mashed potato, adding the bread crumbs and salt to taste.

6. The mixture should be solid but not dry.

7. Form the mixture into small balls and place on an oven tray covered with baking paper, press down slightly with the back of a fork.

8. Bake in the oven for about 30 min, turning half way through.

Serve with fresh salad and mayonnaise!
